Matcha & Quinoa Date Energy Balls
Medjool Dates, Pitted
Coconut oil, melted
Unsweetened Shredded Coconut
Unsweetened Cocoa Powder
May substitute with mini chocolate chips.
Soak pitted dates in a bowl for 10 minutes and drain.
Toast shredded coconut on a pan on low heat for a few minutes – continue to mix so it does not burn.
Place drained dates, coconut oil, toasted coconut, almonds, sea salt, cocoa powder and maca powder into a blender such as a VitaMix and mix until combined.
Place into a bowl and mix in the cocoa nibs and cooked quinoa. Store in refrigerator for an hour and then form into small balls.
