Matcha is powered green tea leaves and known as a superfood! According to Dr. Weil, Matcha is the only tea where the whole leaf is consumed. It is high in antioxidants, especially a polyphenol called EGCG which acts a brain booster and anti-inflammatory. Other benefits of matcha include detoxing the body, improving cholesterol, stabalizing blood sugar and reducing high blood pressure. In addition to these energy balls, I love heating up matcha powder with almond milk and giving it a dash of honey and cinnamon! Try replacing this with your daily coffee regimen and see how you and your body feels!

Instructions
  1. Soak pitted dates in a bowl for 10 minutes and drain.
  2. Toast shredded coconut on a pan on low heat for a few minutes - continue to mix so it does not burn.
  3. Place drained dates, coconut oil, toasted coconut, almonds, sea salt, cocoa powder and maca powder into a blender such as a VitaMix and mix until combined.
  4. Place into a bowl and mix in the cocoa nibs and cooked quinoa. Store in refrigerator for an hour and then form into small balls.
